Our Head Chef Surendra Sooriyarathna originally from Sri Lanka, has an extensive cooking career that spans across the globe. He left Sri Lanka to start his international career in Melbourne, then moved on to Perth and travelled up the coast of Western Australia to Port Hedland. His desire to learn more about western and European cuisine saw him make the move to Germany, where he was employed by the Dorint Hotel Group in one of their Michelin Star restaurants. When dining with us, you will see his preferred cooking style of modern Australian with French finishes.
The Lounge Manager
Bonifacio Napolitano affectionately known as Bonni, came on board with us in Spring 2019, shortly before The Lounge was officially opened in late November. With an empty venue to work with, he had the monstrous challenge of setting up our restaurant from scratch. Having worked within the hospitality industry for over 25 years across Italy, London and Australia, he took this on board without a single hesitation and dove straight in!
In his own words, “Hospitality is not a job, it’s my passion. Great food, excellent service, great atmosphere and consistency are the crucial elements to ensure the guest has a memorable experience. People like to go out and enjoy their night in a nice restaurant and step away from their everyday routine. Their visit with us has to be special. Seeing people happy and enjoying their time with us gives me an immense sense of satisfaction. That’s my goal, making people happy. I really enjoy making people happy!”
